     ✦ Purple mountain rice produces soft, sweet, and subtly fragrant rice, distinctly different from other types of rice grown in other regions. The rice is delicious, not greasy, and easy to eat. It is grown by the Hmong people on high mountains without the use of pesticides or chemical fertilizers. Even the harvesting and milling processes are entirely manual because they lack the necessary equipment on the high mountain slopes.
     ✦ This coarse black rice is called black brown rice. Black brown rice undergoes a milling process that produces the purple upland rice we use. If milled once, it has a light purple color with black spots; if milled a second time, it retains its characteristic light purple color.
     ✦ Purple upland rice is a rich source of protein; the protein in purple rice helps the body build and regenerate muscle tissue, reducing muscle loss. It also stimulates cell growth and helps strengthen bones.
     ✦ The grains are small, long, purple, very sticky, and have a sticky texture. When cooked, it has a fragrant aroma, and the rice retains its chewiness and fragrance even when cooled.Purple upland rice is a rich source of protein – an excellent supplement for vegetarian diets. The protein in purple rice helps reduce muscle loss by aiding the body in building and regenerating muscle tissue. It also stimulates cell growth and keeps bones strong.
   Cooking instructions:
       + Method 1: Soak the rice for 3-4 hours before cooking. Then, put the rice in a pot, add enough water to cover the rice at a 1:1 ratio, and cook as usual.
       + Method 2: Rinse the rice lightly once, add enough water to cover the rice at a 1:1 ratio, then let it sit in the pot for about 30 minutes before cooking. This will ensure the rice grains are evenly soft, chewy, and retain their flavor.
       + Method 3: Soak the rice for 5-6 hours, then gently drain the rice, avoiding breaking the grains. You can add pre-processed lotus seeds, black beans, or green beans according to your taste, mix well, and put the rice in a steamer or rice cooker. Once cooked, remove from the heat and enjoy. You will have a delicious, fragrant, soft, and chewy purple sticky rice dish that is not cloying. You can add a little salt for a richer flavor.
