Busy Weeknight Meals: 10-Minute Hủ Tiếu Soup with Organic Noodles

           Busy with work, finishing late but still wanting a warm, delicious, and not-too-heavy dinner? Instant noodles or leftover rice are probably getting boring, right?
           Today, I'm sharing a super practical 10-minute noodle soup recipe using organic noodles for a quicker and healthier option. Perfect for weekdays, with just a few ingredients readily available in your refrigerator, you can have a hot, fragrant bowl of noodle soup just like the ones you get at restaurants.

            1.Why should you try this organic rice noodle soup?
             • Super fast: From start to finish, it only takes about 10-12 minutes.
             • Easy to make: No need to simmer bones for hours, no complicated techniques required.
             • Healthier: Use organic noodles instead of regular noodles. Organic noodles are usually less preservative-rich, made from clean ingredients, are high in fiber, and easier to digest – perfect for the whole family, including those on a light diet or wanting to cut down on processed fast food.
             • Versatile: You can customize the toppings using what you have available: beef, shrimp, eggs, vegetables, etc.
           
          ✅ Ingredients (for 1-2 bowls)
            Main section:
             • 1-2 packets of organic noodles (fresh or dried organic noodles, about 150-200g)
             • 200g lean pork shoulder or ground beef (or fresh shrimp if preferred)
             • 1 chicken egg (optional)
             • Herbs: green onions, sawtooth coriander, bean sprouts, or lettuce
             • Purified shallots and garlic
          ✅ Quick broth (instant broth):
             • 500-600ml filtered water or ready-made bone broth (if available)
             • 1-2 tablespoons good quality fish sauce
             • 1 teaspoon seasoning powder (or bouillon powder)
             • ½ teaspoon sugar
             • A pinch of ground pepper
             • Oyster sauce or chili sauce (to taste)
          ✅ Additional toppings (optional, add if available):
             • Meatballs, fish cakes, sliced sausages
             • Spinach, bok choy, or shredded carrots (quickly blanched)

          2.How to make organic rice noodle soup in just 10 minutes.
           + Step 1: Prepare the topping (2 minutes)
             • Heat a small pan on the stove, add a little cooking oil, sauté the chopped shallots and garlic until fragrant.
             • Add the minced meat and stir-fry until cooked through, season with a little seasoning powder and pepper for flavor. If using shrimp, stir-fry quickly until the shrimp turn pink.
             • Crack an egg into the pan to make a fried egg or beat it and pour it into the broth later.


           + Step 2: Quickly cook the broth (3 minutes)
             • Boil 500-600ml of water.
             • Once the water boils, season with fish sauce, seasoning powder, sugar, and a little oyster sauce for a sweet and fragrant flavor.
             • If you have bone broth or organic soup powder available, it will be even better.
             • You can also add bean sprouts or thinly sliced vegetables to blanch them briefly to keep them crisp.


           + Step 3: Blanch the organic noodles (2-3 minutes)
             • Organic noodles usually cook very quickly.
             • If using dried noodles: blanch in boiling water for about 2-3 minutes until just tender (don't overcook).
             • If using fresh noodles: just blanch for 30-60 seconds.
             • Drain the noodles into a bowl and drizzle with a little sesame oil or cooking oil to prevent them from sticking together.


           + Step 4: Finishing the noodle soup (1 minute)
             • Arrange the stir-fried meat (or shrimp), egg, herbs, and bean sprouts on top of the noodles.
             • Pour the hot broth over everything.
             • Add pepper, chili sauce, fresh lime juice, and a little chopped green onion. And you're done!
         🌞 Your bowl of noodle soup is ready. In just 10 minutes, you'll have a hot, balanced dinner with carbohydrates, protein, and vegetables.

           3.Tips for a more delicious bowl of noodle soup every day
             • For a dry version instead of a soupy one: Mix the noodles with oyster sauce, chili sauce, and fried garlic for a dry noodle soup like those served in restaurants.
             • For a healthier option: Add more vegetables (broccoli, mushrooms, thinly sliced pumpkin) and reduce the amount of meat.
             • Storage: Organic noodles usually last longer if purchased in good packaging. It's best to buy smaller packs to use throughout the week.

           4.3 Quick and Versatile Dinner Variations
             • Vegetarian Rice Noodle Soup → Replace meat with crispy fried tofu or shiitake mushrooms.
             • Beef Rice Noodle Soup → Use thinly sliced beef stir-fried quickly with onions.
             • Seafood Rice Noodle Soup → Add squid, crab, or basa fish.
