          • 2-3 star anise
          • 1 small cinnamon stick
          • 2-3 cloves
          • 1-2 tablespoons vegetarian soy sauce (tamari or gluten-free soy sauce)
          • 1 teaspoon rock sugar or maple syrup (optional)
          • Salt and pepper to taste
          • 100g shiitake mushrooms or straw mushrooms (to enhance umami)
         + Noodles and toppings:
          • 200-250g organic pho noodles (dried or fresh)
          • 100-150g thinly sliced tofu, fried or steamed
          • Vegetables: shredded carrots, bok choy, bean sprouts, green onions
          • Herbs: sawtooth coriander, Thai basil, cilantro
          • Fresh lime, fresh chili peppers, chili sauce or vegetarian hoisin sauce (optional)

        2.How to make vegetarian pho easily in just 15 minutes.
         • Step 1: Prepare a delicious broth (5-7 minutes)
          + Bring 1 liter of vegetable broth (or water) to a boil.
          + Add onion, ginger, star anise, cinnamon, and cloves to the pot. Simmer over medium heat for 5 minutes to allow the spices to release their aroma.
          + Add shiitake mushrooms and vegetarian soy sauce, season with salt and sugar to taste. Turn off the heat or keep it low to allow the broth to absorb the flavors.
        👉 Quick tip: If you have time to lightly toast the onions and ginger in a dry pan, the broth will be much more flavorful – it only takes an extra 2-3 minutes.
         • Step 2: Boil the organic rice noodles (3-5 minutes)

          + Drain and rinse with cold water to prevent sticking and maintain their chewiness. Let them drain.
         • Step 3: Prepare the toppings (3 minutes)
          + Fry or steam the tofu until golden brown and crispy.
          + Cut the carrots into strips, bok choy, bean sprouts, and herbs in advance.
         • Step 4: Finishing the Pho
          + Arrange the pho noodles in a bowl, add tofu, vegetables, and bean sprouts.
          + Pour the hot broth over everything.
          + Add chopped scallions, herbs, lime juice, and fresh chili peppers to taste.
